Asparagus and Wild Rice Salad


Ingredients

Salad
1 cup of wild rice
2½ to 3 cups water
pinch of sea salt
1 bunch of asparagus, cut into ½-inch segments
1 red bell pepper, diced

Dressing
½ cup freshly squeezed lemon juice
¼ cup extra virgin olive oil
1 bunch scallions


Instructions

Place the rice, water, and sea salt into a pot. Cover and bring to a boil, then reduce heat to low and simmer for 50-55 minutes. Remove from heat and let stand at least 30 minutes to cool.

Bring a saucepan full of water to a boil. Salt the water and add asparagus. Cook for just a minute – until the asparagus is just bright and tender. Drain and run under cold water to stop the cooking.

In a large bowl, combine the wild rice, asparagus, pepper, scallions, oil, and lemon juice. Toss well and serve.
