Roasted Cauliflower


Ingredients

One head cauliflower, cut into florets
2-3 tablespoons of your favorite cooking oil (I like coconut)
3 tablespoons good quality balsamic vinegar
Salt & pepper to taste


Instructions

Preheat oven to 375 degrees. Spread the cut cauliflower onto a baking sheet. Drizzle with oil and vinegar. Add salt and pepper and toss. Bake for about 40 minutes until cauliflower is golden and tender.
 

You can also enhance this dish with some freshly squeezed lemon juice and zest. Or, incorporate additional flavors and textures by adding pine nuts and raisins.
